Background
This radish, cucumber and tomato salsa is an easy summer salad that can be served as a side dish or condiment. It goes particularly well with barbecued meat or perfect in burgers and wraps! You can give it a kick by adding a chilli!
Ingredients
- 150g ripe tomatoes
- Β½ cucumber
- 100g radish
- 1 handful of mint leaves
- 1 small red onion
- Dressing:
- 2 Tbsp extra virgin olive oil
- Β½ tsp Dijon mustard
- Β½ tsp grainy mustard
- juice of 1 lemon or lime
- 1 chilli (optional)
Instructions
- Finely chop the onion and tomatoes. Cut the cucumber in half (lengthwise) then scrape out the soft part and discard. Dice the cucumber and radish. Toss all the chopped vegetables in a large serving bowl. Finely shred the mint and add to the salsa.
- If using, deseed the chilli, remove the veins, then finely chop. Whisk together the ingredients of the dressing, taste and adjust to your liking. Pour it over the salsa, toss well, and season with salt and pepper to your taste.
- Chill until needed.
