Raspberry and almond oat bars
Background
These healthy raspberry and almond oat bars are vegan, gluten-free and sugar-free. They are sweet enough thanks to the bananas, vanilla, and raspberries. I added some spices to the mixture, but you donβt have to if you donβt like ginger or cinnamon. These oatbars are perfect for breakfast and snacking during the day.
Ingredients
- 2 large or 3 small ripe bananas
- 2 Tbsp almond butter or vegetable oil
- 1 cup rolled oats (gluten-free, if needed)
- 1 tsp vanilla essence
- Β½ cup almond flakes
- Β½ tsp ground ginger (optional)
- Β½ tsp cinnamon (optional)
- 1 Tbsp dried raspberries (optional)
- 1 cup raspberries
Instructions
- Preheat the oven to 180Β°C. Grease and line a shallow, about 20x30 cm, baking dish.
- Using a fork, mash the bananas, then mix in the oil, vanilla essence and almond butter or oil.
- Add the oats and spices (if used) and combine well.
- Add the raspberries and mix well, then fold in the dried raspberries and almond flakes.
- Transfer the mixture to the prepared dish, spreading it out evenly.
- Bake for 20-25 minutes until golden.
- Let it cool, then cut it up into slices or squares.
