Background
If you need a quick and easy slaw for summer barbecues, parties and picnics try this this crunchy, vegan red cabbage, carrot and radish salad. It’s perfect with kebabs, falafels and grilled halloumi, tucked into pita or other flatbreads.
Ingredients
- 1 large carrot
- ½ small red cabbage
- 1 small or ½ medium red onion
- 8 radishes
- 2 Tbsp chopped flat parsley leaves
- Salt&pepper
- 2 Tbsp olive oil
- juice of 1 lemon
Instructions
- Shred or finely slice the cabbage. Coarsely grate or spiralise the carrot. Thinly slice the red onion and radishes.
- Scatter all into a large serving bowl. Add the parsley, lemon juice and olive oil. Season with salt and pepper.
- Toss well and chill for at least 30 minutes before serving - the longer the better.
- Before serving, taste the salad and adjust the seasoning to your liking.
Tips
You can spice it up by adding a red chilli (thinly sliced) or a couple of pinches of chilli flakes.© 2024 Copyright CookTogether
