Background
This red cabbage slaw is super easy to make - perfect salad for parties, barbecues, picnics or filling in sandwiches, burgers, warps and so on. For a healthier version use Greek yogurt instead of (or mixed with) the mayo. It keeps well in the fridge for several days.
Ingredients
- 6 Tbsp good quality mayonnaise
- 1 small red cabbage
- 2 medium carrots
- 1 small red onion
- Lemon juice
Instructions
- Finely slice or shred the cabbage and roughly grate the carrots. Finely slice the onion.
- In a serving bowl, toss well all ingredients, then season with salt & pepper.
- Add a squeeze of lemon juice, if liked. You can add some chopped fresh herbs too.
