Red lentil soup with bacon

Background
This simple red lentil soup with bacon can be made within half an hour, it requires very little preparation. Perfect soup on a cold day - also it's ideal on New Years Day, when Β we're supposed to eat pork & lentils to be lucky for the rest of the year. Serve with crusty bread and you'll have a hearty meal!
Ingredients
- 1 tsp oil
- 1 red onion
- 3 slices of smoked bacon
- 1 tsp thyme leaves
- 150g red lentils
- 1 litre chicken stock or soup
- To serve: ground pepper, grated cheese, sour cream (optional)
Instructions
- Peel & finely chop the onion. Cut the bacon into small cubes.
- Heat the oil in a saucepan, add the onion and bacon. Cook for about 5 minutes, until the bacon becomes crispy and the onions are soft. Add the thyme leaves and lentils.
- Pour in the stock, bring to the boil and simmer on low heat for 20-25 minutes.
- Serve with ground pepper and/or with grated cheese & sour cream if you like.
