Red pepper and courgette soup

Background
This soup is super-healthy and very easy to make. Ideal for those who are dieting or follow a gluten-free and/or diary free diet
Ingredients
- 1 red onion
- 1 Tbsp olive oil
- 1 clove of garlic
- 3 red peppers
- 1 medium courgette
- 1 litre vegetable stock
- Salt and pepper to taste
- 1 handful of fresh coriander or parsley leaves
Instructions
- Chop the onion and, in the preheated oil, fry until it softens.
- Roughly chop the peppers, courgette and garlic.
- When the onion has softened, add the garlic, stir for a minute, then add the vegetable pieces.
- Steam under lid for about 5-8 minutes, then add the hot vegetable stock and season with salt and pepper.
- Bring it to the boil, then simmer it covered for 20 minutes.
- Add the herb, then blend the soup until smooth.
- Serve it with bread or gluten-free alternative.
Tips
Before serving you can add a spoonful of Greek yogurt to make it more creamy!© 2025 Copyright CookTogether
