Rice with lentils and vegetables (Kichadi)

Background
Kichadi is a dish which is very healthy and nutritious. It has the combination of rice, lentils and vegetables. It is very easy to make and it has many variations. This particular recipeΒ is a favourite in my family.
Ingredients
- 1 cup rice (uncooked)
- ½ cup lentils (split pigeon peas, split yellow lentils and split red lentils)
- 1 tsp cumin seeds
- 1 green chilli
- ½ tsp grated ginger
- ½ cup vegetables (potato, carrot, peas and any kind of vegetable, uncooked)
- 1 Tbsp ghee (clarified butter)
- 1 tsp turmeric
- Salt as required
- 3 cups water
Instructions
- In a pressure cooker, heat the clarified butter.
- Add the cumin seeds and let them splutter.
- Add the grated ginger and sautΓ© for few seconds taking care not to burn it.
- Add the veggies, green chilli, rice, lentils and water.
- Add the salt and turmeric
- Pressure cook all the vegetables and rice.
- Serve hot with raita.
Tips
- Don't add any vegetables which are sticky after cooked.
- Add chopped onion along with cumin seeds and fry, for a variation of taste.
- Peppercorns can be added to the rice and vegetables instead of green chillies.
