Roast tomato soup

Background
This is a simple, classic soup that has a rich flavour. It can also be used as a tomato sauce in other recipes - so it's worth making lots of it! Serve it with crusty bread or toasted ciabatta.
Ingredients
- 1Β½ kg ripe tomatoes on the vine
- Β½ tsp brown sugar (optional)
- Small handful of basil or oregano
- Salt, pepper, olive oil
Instructions
- Preheat the oven to 200Β°C.
- Wash the tomatoes and arrange them in a roasting tin (leave them on the vine).
- Drizzle 3 tbsp oil over them and bake for 20-25 minutes until soft .
- Take them out of the oven and, when cooled a little, mash with a fork and discard the vines.
- Transfer the tomatoes and all the juices into a liquidiser, add the sugar & basil and blend until smooth.
- If you prefer a silky smooth soup , pass it through a sieve.
- Season to taste and warm it up if necessary.
- Serve with a few basil or oregano leaves scattered on top.
Tips
You can roast 2 cloves of garlic with the tomatoes if you like.© 2024 Copyright CookTogether
