Roasted figs with chicory

Background
This roasted figs with chicory is an excellent side dish that goes well with duck, goose or lamb. Β The figs are roasted in a balsamic sauce that caramelizes over them, making them even more delicious and sweet. The chicory provides some sharpness and crunch.
Ingredients
- 4 ripe figs
- 1 red onion
- 3 Tbsp balsamic vinegar
- 2 Tbsp olive oil
- 1 Tbsp unrefined cane sugar
- 1 handful pistachios
- 1 small head of chicory (white or red)
Instructions
- Preheat the oven to 200°C.
- Peel the onion, cut in half then slice thinly.
- Cut the figs in half or in quarters, then arrange them with the onions on a baking sheet.
- Drizzle with the vinegar and oil, then sprinkle with sugar. Season to taste.
- Bake in the oven for about 10 minutes until soft and the sugar starts to caramelise.
- Roughly chop the pistachios and sprinkle over the figs. Bake for another 5 minutes or so.
- Roughly chop the chicory, add to the figs. Season with salt and pepper and serve warm.
