Roasted flattened rice snack mix

Background
This is a healthy snack mix is made by roasting flattened rice with few spices and nuts. It is tasty and can be easily prepared.
Ingredients
- 2 cups thick flattened rice
- 2 tbsp. oil
- 1 tsp mustard seeds
- Β½ tsp cumin seeds
- 1 tbsp. chopped green chilies
- 1 bunch curry leaves
- 2-3 red chilies broken into few pieces
- 2 tbsp. peanuts
- 2 tbsp. roasted chickpeas
- 2 tbsp. dried coconut sliced
- A pinch asafetida
- ΒΌ tsp turmeric powder
- Salt to taste
Instructions
- Take a deep bottomed pan and shallow fry the flattened rice on low flame by stirring continuously.
- The flattened rice will become crunchy after 5 mins. Remove from heat and transfer to a plate.
- In the same pan heat oil and add mustard, cumin seeds, once they crackle, add asafetida, curry leaves and green chilies.
- Now add peanuts and roast until they are well fried. Add turmeric powder and roasted chickpeas.
- Add flattened rice and mix well. Remove from the stove and set aside.
- In a small pan add 1 tsp oil and fry the coconut slices until they change color.
- Add the fried coconut flakes to the flattened rice mixture and mix gently.
- Store it in an airtight container.
