Roasted red pepper spread with walnuts

Background
This middle-eastern inspired roasted red pepper spread with walnuts is a very versatile dish - it can be used as a sandwich filling; a pizza or pasta sauce; a dip with cruditΓ©s or to spread on party nibbles and appetizers. It can be whizzed up in just 5 minutes. I keep a jarful in the fridge for "emergency" use.
Ingredients
- 100g roasted red pepper
- 50g walnuts
- 2 tsp red wine vinegar
- ½ tsp ground cumin
- ¼ tsp sweet paprika
- ¼ tsp cayenne pepper
- 1 Tbsp tomato purΓ©e
- 1 clove of garlic
- 1 tsp olive oil
Instructions
- Dry-fry the walnuts in a frying pan until fragrant, then let them cool.
- Put all ingredients into a blender and whizz until you get a thick, textured paste. Taste and season with salt and pepper.
- Chill until needed.
Tips
If you don't want it spicy, use just sweet paprika instead of cayenne pepper. You can also add a pinch of sugar to make it sweeter.© 2024 Copyright CookTogether
