Rustic tomato soup
Background
This tomato soup a very simple version - all ingredients go into the saucepanΒ togetherΒ and cook for 45 minutes. That's it. The soup is thick & smoothΒ so any leftover is perfect for other recipes requiring a tomato sauce. It's also super-healthy, full of vitamins and low in calories. Also, unlike canned tomato soup, it has no sugar.
Ingredients
- 1 kg of ripe tomatoes
- 1 large carrot
- 1 red onion
- 3 stalks of celery
- 1 clove of garlic
- 2 bay leaves
- 1 Tbsp cold-pressed olive oil
- Salt and pepper
Instructions
- Roughly chop the vegetables and put them in a large saucepan. Add the oil and bay leaves, then season.
- Bring to the boil, then cover and simmer on a low heat for about 45-60 minutes. Stir occasionally, but don't add water, as the tomatoes will have enough liquid!
- When all vegetables are soft, remove the pan from the heat. Blend with a hand blender or in a liquidizer until smooth.
- Press the soup through a sieve if you'd prefer it silky smooth.
Tips
- Before blending, add a handful of fresh herbs (parsley, basil or coriander).
- You can use up the leftover for other recipes instead of passata or tomato sauce.
