Sambar powder
Background
Sambar is integral part of any south Indian households. The key ingredient for a perfect sambar recipe is sambar powder. There are several varieties of this spice mixture, and is readily available in groceries stores but nothing can beat home made sambar powder. Sambar goes well with rice, ghee and chicken fry as a side.
Ingredients
- Β½ cup coriander seeds
- 2 Tbsp split red gram
- 2 Tbsp split chickpeas
- 1 Tbsp cumin seeds
- 2 Tbsp black gram
- ΒΌ tsp fenugreek seeds
- Β½ tsp mustard seeds
- 1 sprig curry leaves
- 1 tsp black pepper
- 20 whole red chillies
- 1 tsp turmeric
- ΒΌ tsp asafoetida
Instructions
- Take a thick bottomed pan and add coriander seeds. Dry roast until the raw smell is gone. Set aside to cool.
- In the same pan, add split red gram, split chickpeas, black gram, cumin seeds and fenugreek seeds. Dry roast until the raw smell is gone. Set aside to cool.
- Dry roast mustard seeds, till they splutter. Add them to the mixture.
- Add in the curry leaves, black pepper and 20 dry red chillies. Dry roast them as well.
- Add in turmeric and asafoetida and roast them for 2-3 min.
- Transfer all the dry roasted ingredients to a blender and ground to fine powder.
- Store in air tight container.
