Background
This sauerkraut, gherkin and beetroot salad is very popular all over Eastern-Europe. It’s important that you use proper sauerkraut and fermented gherkins, which are available in most Polish delis. It’s normally served on the side of fried or grilled sausages, meatballs and pork dishes.
Ingredients
- 1 cup sauerkraut
- 1 small carrot, grated
- 1 large fermented gherkin
- 2 small pickled beetroot
- Honey, optional
Instructions
- Put the sauerkraut into a mixing bowl.
- Cut the gherkin and beetroot into tiny pieces. Add these to the cabbage.
- Mix well. Season with freshly ground pepper.
- Add honey if you’d like it a bit sweet.
- Keep chilled until serving.
