Sausage and beans stew

Background
This sausage and beans stew is a lovely, easy dish that’s perfect for a midweek family meal. You can serve it with pasta, boiled potatoes, mash or just bread.
Ingredients
- 8 chipolatas
- 2 Tbsp rapeseed oil
- 1 onion
- 2 sprigs of rosemary
- 2 garlic cloves
- 2 small red pepper (pimento)
- 1 carrot
- 1 Tbsp tomato purée
- 450 ml passata
- Salt & pepper
- 1 tsp stock powder
- 250 ml water (approx.)
- 1 tin borlotti beans
- 100g green beans
- 2 Tbsp chopped fresh parsley
Instructions
- Heat half of the oil in a casserole dish, then fry the chipolatas.
- Meanwhile, finely chop the onion, garlic and rosemary leaves. Cut the carrot and pimento into small chunks.
- When the sausage are golden, transfer them to a plate. Add the onion to the pot and fry until soft, then add the garlic, rosemary, carrots and red peppers. Stir for a minute, then add the tomato purée. Stir for a few seconds, then add the passata, water, stock powder and borlotti beans.
- Bring to the boil, cover and cook for 10 minutes over medium heat.
- Cut each chipolata into 3 pieces and add these to the stew together with the green beans. Season to taste. Add more water if it’s too thick.
- Cook for another 5-10 minutes, then stir in the parsley and serve.
