Background
This sausage, fennel and beans salad is perfect when you have leftover grilled or fried sausages. It’s ideal for your lunch box or picnics and trips. You could put it on the buffet table at parties too! You can use fresh or roasted red pepper for the recipe. Serve it with fresh bread or wrapped in tortilla, pita or flatbread.
Ingredients
- ½ red onion
- ½ fennel bulb
- 1 garlic clove, minced
- ½ red pepper
- 1 tin mixed beans
- 1 Tbsp Dijon mustard
- 1 tsp olive oil
- Lemon juice to taste
- Salt and pepper
- 1 Tbsp chopped parsley
- 2 leftover grilled/fried sausages
Instructions
- Finely chop the onion, fennel and red pepper.
- Drain the beans and put them in a mixing bowl.
- Add the chopped onion, pepper and fennel, then the minced garlic.
- Add the oil and mustard, then combine.
- Add enough lemon juice to your liking. Taste and season with salt and pepper.
- Stir in the parsley.
- Cut the sausages into bite-sized pieces and mix with the salad.
