Sausage with lentils, mushrooms and beans

Background
Leftover grilled or fried sausages are very useful for making quick and easy dishes, so I always cook more than I need for just one meal. For example this Sausage with lentils, mushrooms and beans is ready in just 15 minutes, perfect for busy or lazy days. Serve it with crusty bread or toast.
Ingredients
- 2 leftover sausages
- 2 Tbsp olive oil
- Β½ red onion
- 2 cloves of garlic
- 100g mushrooms
- 3 sprigs of thyme, leaves only
- 1 Tbsp red wine vinegar
- 1 tin brown or green lentils, drained
- 1 tsp Dijon mustard
- 1 large handful green beans
- Lemon juice
Instructions
- Cut the sausages into bite-sized pieces, then set aside.
- Finely chop the onion and garlic. Chop the mushrooms too.
- Heat the oil in frying pan and gently sautΓ© the onion for 5 minutes, then the garlic, mushroom and thyme leaves. Put a lid on and let it sweat for 5 minutes over low heat.
- Add the vinegar and let it sizzle, then cook until it has evaporated. Add a drop of water, and the beans. Put a lid on and cook for 3 minutes over medium heat or until the beans are tender.
- Stir in the lentils and mustard and warm through. Finally add the sausage pieces, put the lid on and warm through for a couple of minutes over low heat.
- Serve warm.
