Sauteed balsamic courgette with spring onion

Background
This sautéed balsamic courgette with spring onion is ready in just 10 minutes. You can serve it with a piece of toast or pasta, alternatively it goes well with fish, steak or chicken on the side.
Ingredients
- 1 Tbsp olive oil
- 1 courgette
- 1 bunch spring onion
- 1 garlic clove, minced
- 1 pinch chilli flakes (optional)
- 2 Tbsp balsamic vinegar
- Handful of black, pitted olives
- Basil or parsley leaves
Instructions
- Cut the courgette in half vertically, then slice the two halves into half-moon shaped pieces.
- Cut the spring onion into small bits.
- Heat the oil in a saucepan and gently sauté the courgette for 5 minutes. Stir in the spring onions and garlic, and after a minute or so, add the vinegar. Season with salt and pepper and add the chilli flakes, if used.
- Put a lid on and sauté for 5 minutes.
- Add the olives and herbs, then serve.
