Sautéed courgette with thyme
Background
If you're after a super-easy side dish this sautéed courgette with thyme and lemon is worth a try. It's zingy, easy to make, and can be eaten cold too - so you can prepare it in advance for a party, or take it with you in your lunchbox or to a picnic. It goes really well with barbecued meat or fish and makes an excellent filler in burger or kebab.
Ingredients
- 2 medium courgettes (zucchini)
- 3 Tbsp olive oil
- Juice of 1 lemon
- 2 cloves garlic, chopped finely
- 1 handful of thyme
- Salt, pepper, thyme to garnish
Instructions
- Cut off the ends of the courgettes then, using a vegetable peeler, shave in into long ribbons.
- Heat some oil in a frying pan, add the garlic and thyme and cook for one minute. Add the lemon juice and the courgette strips. Sautee for about 3- 5 minutes under cover. It's ready when the lemon juice is absorbed.
- Season to taste and sprinkle with fresh thyme before serving.
