Sauteed potatoes with chorizo

Background
This sautéed potatoes with chorizo is a popular tapas dish. It’s very easy to make, particularly if you use pre-cooked or leftover boiled potatoes. It’s perfect for brunch, lunch or light supper, served with a crispy salad – or fits in a tapas menu at a dinner party.
Ingredients
- 300g waxy potatoes
- 2 Tbsp olive oil
- 1 onion, sliced
- 2 cloves of garlic
- 2 springs of thyme, leaves only
- 150g cooking chorizo
- 1 Tbsp chopped Parsley leaves, chopped
Instructions
- Cut the potatoes in half and cook them in lightly salted water for 20 minutes, until tender. Drain then cool them, then cut them into about 1 cm slices.
- Thinly slice the onion & chorizo, then chop the garlic.
- Heat the oil in a frying pan. Fry the onion, garlic and thyme in hot oil until soft. Add the potato slices and fry them until golden. Transfer them to a plate.
- Fry the chorizo, until golden and has released its fat. Return the potato mixture to the frying pan and combine with the chorizo fat.
- Add the parsley and serve.
