Scallop and Mozzarella Frittata
Background
This scallop and mozzarella frittata is elegant, light and full of delicate flavour. Made with sweet Patagonian scallops, creamy mozzarella and tangy sun-blushed tomatoes, it’s a simple yet impressive dish that feels special without being complicated.
Patagonian scallops are small, tender and naturally sweet, making them perfect for quick cooking. Paired with soft mozzarella and eggs, they create a beautifully balanced frittata that works wonderfully for special breakfasts and brunches, such on Mother’s Day, anniversaries or Valentine’s Day. It’s equally delicious served in small squares as nibbles at a drinks party, or as a light lunch with a crisp green salad.
Ingredients
- 150g Patagonian scallops
- 4 large eggs
- 6 mini mozzarella balls
- 6 sun-blushed tomatoes in oil
- 1 Tbsp olive oil
- A pinch of Italian herbs
- Salt, to taste
- To serve: Wild rocket leaves, pea shoots or mixed sprouted salad leaves
Instructions
- Lightly whisk the eggs in a bowl with a couple of pinches of salt until just combined. Do not overbeat.
- Heat the olive oil in a medium, non-stick frying pan over medium heat.
- Add the scallops in a single layer. Cook for about 1 minute, then turn them over and cook for another 30 seconds. They should be just opaque - avoid overcooking.
- Reduce the heat slightly and pour the whisked eggs evenly over the scallops, tilting the pan if needed so the mixture spreads evenly.
- When the surface of the frittata is about half set, nestle in the mini mozzarella balls and arrange the sun-blushed tomatoes evenly over the top. Sprinkle with a pinch of Italian herbs.
- Cover the pan with a lid and cook gently for about 5 minutes, until the eggs are set.
- If you would like a golden top, place the pan briefly under a preheated grill for 1–2 minutes. Keep a close eye on it to prevent burning.
- Slide the frittata onto a serving plate and garnish with wild rocket, pea shoots or sprouted leaves.
- Cut into wedges or small squares and serve warm or at room temperature.
