Scallops in dill and wine sauce

Background
These scallops in dill and wine sauce is a super easy dish, ready in just 5 minutes. Itβs delicate and yummy, perfect as a tapa, antipasti or party nibbles. Alternatively, you could serve it on crostini, toast, blini or with freshly cooked pasta.
Ingredients
- 1 knob butter or margarine
- 1 clove of garlic, sliced (optional)
- 200g raw scallops
- Pinch of cayenne, optional
- 50 ml white wine
- 2 Tbsp chopped dill
- Salt and pepper
Instructions
- Heat the butter in a shallow, non-stick pan and fry the garlic for a few seconds over a medium heat. Make sure it doesnβt burn!
- Add the scallops, one by-one. When youβve finished, turn them over, again one-by-one using a spoon. Then pour over the wine, add the chilli if used. Let it bubble and reduce the jus by half. Please Scallops must not be over-cooked!
- Season to taste and stir in the dill.
- Serve warm.
