Seafood in tomato sauce

Background
It’s worth keeping ready-to-cook mixed seafood in the freezer, as it’s ideal for quick and easy meals. I made this Seafood in tomato sauce dish with my home-made spiced tomato sauce, but you can use any shop-bought versions too. For the mixed veggies you can use kale, peas, mushroom, leek, red pepper, green beans, spinach and so on. Serve it with pasta, rice, couscous or just on a piece of toast.
Ingredients
- 450g mixed seafood (frozen is also good)
- 1 onion
- 1 tsp capers
- 1 clove of garlic
- 2 cups mixed chopped vegetables of your choice
- 2 cups home-made or jarred spicy tomato sauce
- 1 bay leaf
- 1-2 Tbsp chopped parsley or basil
- Olive oil
Instructions
- Thinly slice the onion and finely chop the garlic.
- Heat the oil in a frying pan and sauté the onion for 5 minutes.
- Add the garlic and capers, then stir for a minute.
- Pour over the tomato sauce, then add the bay leaf and the vegetables.
- Simmer until the vegetables are tender. If the sauce is too thick, add some stock.
- Rinse the seafood, then add it to the tomato sauce. Simmer for about 5-8 minutes.
- Scatter the chopped parsley on top, then serve.
- You can sprinkle some grated Parmesan on top, if you like.
