Semolina Halwa (Semolina sweet pudding)

Background
Semolina halwa or sweet pudding which is very tasty as well as easy to make. It can be made for different festivals like Diwali, Dussera, etc. It's specially a hit with kids.
Ingredients
- ½ Cup Butter or ghee
- ½ Cup Mixed nuts and raisins
- 1 Pinch salt
- 1 Cup Semolina
- 1 Cup Sugar
- 2½ Cups water or milk
- Saffron to taste (Optional)
Instructions
- Heat the butter or ghee in a heavy bottomed pan. Add the nuts and raisins and cook on low flame until the nuts are light brown and raisins swell and set them aside.
- Add the semolina and roast on slow flame until it is fragrant.
- Add sugar and water or milk and cook until all the water/milk is absorbed.
- When the water is almost absorbed add the salt and saffron and mix.
- Cover the vessel with a lid after it is done and let it rest for a while before serving.
