Sesame prawn toast

Background
If you're throwing a Chinese themed party or want to celebrate Chinese New Year you must have some prawn toasts! Also, if you want a delicious snack with your green tea it's an ideal way to use up stale sliced bread! The recipe of these sesame prawn toast is traditional and authentic, so it contains pork too.
Ingredients
- 200g raw shrimp/prawn (peeled)
- 200g minced pork
- 2 eggs (separated)
- 1 garlic, minced
- 1 Tbsp chopped coriander
- 2 Tbsp grated ginger
- 100g sesame seeds (approx.)
- A few drops of sesame oil
- 8-10 pieces of thinly sliced bread (slightly staled)
- Oil, salt and pepper
Instructions
- Blend the shrimps together the egg whites, garlic, ginger, sesame oil and coriander. Transfer to a bowl and stir in the minced pork. Season to taste with salt and pepper.
- Remove the crust from the bread then cut each slice into 3 or 4 rectangles, depending on the size of the loaf.
- Scatter the sesame seeds into a flat plate.
- Lightly beat the egg yolk in a small bowl and dip a bread triangle into it , then spread some prawn paste on one side. Prepare 3-4 pieces for frying.
- Heat plenty oil in a wok then using a slotted spoon carefully lower the toasts into the wok ( paste-side down). Deep-fry for 2 minutes, then turn them over and fry for another 2-3 minutes until golden.
- Drain the toasts on paper kitchen towel.
- In the meantime, prepare the next batch for frying.
- Continue until you finish the bread and the shrimp paste.
- Serve it with chilli or soy sauce .
