Shiitake and green beans stir-fry

Background
This Japanese-style shiitake and green beans stir-fry goes really well with Teriyaki chicken or salmon. If youβre vegan or vegetarian, just add some tofu and serve it with noddle or rice for a meal.
Ingredients
- 125g shiitake
- 100g green beans
- 1 bunch spring onion
- 1 Tbsp oil
- 2 Tbsp Kikkoman soy sauce
- 1 tsp rice viniger
- 2 tsp Mirin
- 1 tsp Miso
- 1 tsp Sesame seeds
Instructions
- Thinly slice the mushrooms and spring onions.
- Heat the oil in a frying pan or wok over medium heat. When itβs hot, add the mushroom and cover. Turn down the heat and sautΓ© for 5 minutes until the mushrooms have released some liquid.
- Add the spring onion pieces and fry for a minute.
- Add the soy sauce, mirin, miso, rice vinegar and the beans to the mushrooms, put the lid on and sautΓ© for another 3-5 minutes over low heat until the vegetables are tender. Taste, and adjust to your liking.
- Serve with the sesame seeds scattered on top.
