Shiitake and red pepper stir-fry

Background
This yummy Shitake and red pepper stir-fry can be served on a piece of toast or with noodles as a main vegan meal, or asΒ a side dish (for example with grilled steak or fish). Itβs ready within 15 minutes, so itβs ideal on busy/lazy days.
Ingredients
- 1 Tbsp vegetable oil
- 4 spring onions
- 2 cloves of garlic
- 1 tsp chilli flakes
- 125g shiitake
- 1 red pepper
- 1 Tbsp Kikkoman soy sauce
- 1 tsp sesame oil
- 1 tsp sesame seeds
- 2 Tbsp chopped coriander leaves
- Lime juice
- Ground pepper
Instructions
- Finely slice the spring onions and garlic. Cut the mushrooms into chunks and the bell pepper into thin slices.
- Heat the oil in a wok over medium-high heat. When itβs hot, add the spring onion and stir-fry for 3 minutes, then add the garlic and chilli flakes and stir for another 30 seconds.
- Add the mushroom and red pepper, stir fry for a minute or so, then add the soy sauce, sesame oil & seeds. Add some lime juice too. Turn down the heat and sautΓ© for 3-5 minutes, until the mushrooms and red pepper are tender.
- Scatter the coriander leaves on top, season with plenty of ground pepper and squeeze some lime juice over it, then serve.
