
Background
This super easy shiitake stir-fry is ready within 10 minutes. Iβve added red pepper to the recipe, but you could use edamame beans., green bean, kale or courgette. Serve it with noodles or rice.
Ingredients
- 125g shiitake mushrooms
- 1 bunch salad onions
- 1 red pepper
- 1 Tbsp vegetable oil
- 2 Tbsp Kikkoman soy sauce
- 1 tsp rice vinegar
- 1 Tbsp Mirin or rice wine
- 1 tsp sesame oil
- 1 Tbsp sesame seeds
- 1 Tbsp chopped coriander leaves
Instructions
- Cut the bigger mushrooms into smaller pieces. Chop the salad onions and the garlic. Thinly slice the red pepper.
- Heat the oil in the wok and add all the chopped veggies. Stir-fry them for 2 minutes, then add the rice vinegar and stir for a minute.
- Add the soy sauce and rice wine and a splash of water. Cover the wok, turn down the heat and cook for 5-8 minutes, until the veggies are tender.
- Add the sesame oil and coriander leaves, then turn off the heat.
- Serve with sesame seeds scattered on top.
