
Background
Insalata di cozze is a famous and popular antipasto. The mussels are cooked in white wine then served with a simple vinaigrette. This simple mussel salad is made with ready-cooked mussels available in most supermarkets. It takes only a couple of minutes to whisk together theΒ dressing et voilΓ you've got some lovely nibbles that go well with a glass of Prosecco or white wine!
Ingredients
- 150g ready cooked mussels
- 1 Tbsp white wine vinegar or Β½ lemon
- 2 Tbsp olive oil
- 1 clove of garlic, minced
- 1 Tbsp chopped parsley, basil or dill
- Salt & pepper
- Chili flakes
Instructions
- Rinse & drain the mussels then put them in a bowl.
- Whisk together the oil, vinegar, garlic and herbs. Season with salt and pepper. Taste and adjust it to your liking. Pour the dressing over the mussels and add a few pinches of chilli flakes, if liked.
- If you have time, let the mussels marinate for an hour or so in the fridge before serving.
Tips
You can use fresh mussels if you'd prefer. Put them in a large pot, add a small glass of white wine and bring to the boil. Cover and let the mussels steam for a few minutes, until the shells just open. Move them to a colander to cool. Shell them and place the mussels in a bowl and add the dressing.Categories
