Simple tomato soup

Background
A warm soup is just what one needs on a wintery day. This simpleΒ tomato soup is a great hit with the kids. Β You just need ripe tomatoes and Β can slip in as many veggies youΒ want. This is an easy and greatΒ way to get kids eat more veggies!
Ingredients
- 500g Ripened tomatoes (Roughly chopped)
- 500g Plum tomatoes
- 1 litre Organic vegetable or chicken stock
- 1 Onion (Rougly chopped)
- 1 Carrot (Rougly chopped)
- 1 Celery stick (Rougly chopped)
- 1 Garlic pod
- 1 tsp Olive oil
- Salt as required
- Pepper as required
Instructions
- Heat oil in a pan, add the onion, carrot, celery and the garlic and add 100 ml of the stock and cook the vegetables until soft. Set them aside to cool.
- Add the ripened tomatoes and plum tomatoes to the stock and cook the tomatoes in the stock.
- Once the tomatoes are cooked, remove them from the stock and set aside to cool.
- Once all the ingredients are cooled, blend together the cooked veggies and tomatoes and add this blended paste to the stock and boil.
- Serve hot with croutons, salt and pepper.
