Smoked goose & chicory salad

Background
This smoked goose & chicory salad is rather special, so it's ideal in a Christmas, New Year or other celebratory menu. You can use cured/smoked duck or other game for this recipe too, if you can't find goose. Serve it as an appetizer with Champagne or as a starterΒ atΒ a festiveΒ dinner party.
Ingredients
- 100g sliced smoked goose breast
- 1 head chicory
- 2 handfuls of rocket leaves
- seeds of half a pomegranate
- 1-2 handful of almond flakes
- Dressing:
- 1 Tbsp pomegranate molasses (see Tips)
- Β½ tsp Dijon mustard
- 2 Tbsp olive oil
- 2 Tbsp walnut oil
- salt and pepper
Instructions
- Dry-fry the almond flakes in a frying pan, set aside.
- Tap out the seeds of the pomegranate using the back of a spoon and remove the white membranes.
- Separate the chicory leaves.
- Arrange the rocket and chicory leaves on a serving plate then add the smoked goose slices.
- Whisk together the dressing.
- Sprinkle the salad with pomegranate seeds (about 2-3 Tbsp) and the toasted almond flakes then drizzle with the dressing just before serving.
Tips
You can make pomegranate molasses easily. Just squeeze out the juice of 1 pomegranate , heat it up in a pan and reduce it until you get a thick syrup. You can add a spoonful of sugar, which will make the process quicker.© 2024 Copyright CookTogether
