Smoked salmon, avocado and watercress salad

Background
You can’t go wrong with this smoked salmon, avocado and watercress salad, even if you’re not an expert in the kitchen. It’s best to make it juts before serving - perfect on festive/celebratory buffet tables or you can serve it as a starter with blini or toasties.
Ingredients
- 100g smoked salmon
- 75g watercress
- 1 avocado
- 1 handful yellow or red cherry tomatoes
- Lemon juice
- Olive oil
- Aged balsamic vinegar
Instructions
- Scatter the watercress onto a big platter.
- Tear the smoked salmon into bite-sized pieces and arrange these on top of the watercress together with the rinsed tomatoes.
- When you’re ready to serve, cut the avocado in half, remove the stone and skin, then cut the flesh into thin slices. Scatter these around the salad, then squeeze some lemon juice all over.
- Add some freshly ground pepper, then drizzle with extra virgin olive oil and aged balsamic vinegar.
- Serve immediately.
