Smoked salmon, goat cheese and cucumber bites

Background
Smoked salmon canapés are always popular at drink parties, particularly during the festive season. These smoked salmon, goat cheese and cucumber bites are gluten-free, low-carb and there is no cooking involved. Most importantly, you can make them well in advance. You can cut the cucumber up into smaller pieces if you like, but they should be minimum 1 cm thick (and you don’t need to remove the soft flesh of the thinner pieces!). One cucumber is enough for 8-16 canapes.
Ingredients
- 1 cucumber
- 100g soft goat cheese
- 1 Tbsp chives or dill
- 1 lemon, zested then juiced
- Freshly ground pepper
- 1 slice smoked salmon
Instructions
- Cut the ends off of the cucumber then cut it in half diagonally.
- Using a vegetable peeler, peel long stripes on both or just one of the two pieces - from end to end to create a stripy effect.
- Then cut both halves diagonally again into approx 3cm thick pieces.
- Using an apple corer, cut out the middle, soft flesh of the cucumber.
- Put the hollow cucumber pieces on a paper kitchen towel.
- In a small bowl, mix the soft goat cheese with the chives or dill, some ground pepper, the lemon zest and some juice. Taste and adjust it to your liking.
- Put approx. a teaspoon of the goat cheese mixture in the middle of each cucumber piece.
- Tear or cut the smoked salmon into small strips and put them on top of the cheese, tucking them into the cucumber. Drizzle them with some lemon juice.
- Garnish with dill or chives and ground pepper. Chill for at least 20 minutes before serving.
