Smoked salmon and tofu fritters
Background
Fritters make perfect nibbles accompanied with a glass or two; or as snacks for picnic/trips; or as appetizers/starters at a dinner party - so I regularly make them. These smoked salmon and tofu fritters are especially nice - gluten-free and low-carb too (if gram flour is used). Most importantly, they are really delicious and are ready within 15 minutes!
Ingredients
- 2 slices of smoked salmon
- 100g tofu, medium-hard
- 1 egg
- 1 tsp soy sauce
- 1 tsp sesame oil
- ½ chilli (optional)
- 5 spring onions, finely chopped
- Approx. ½ cup gram (or buckwheat or brown rice) flour
- Sesame seeds
Instructions
- Put the salmon, egg, tofu, soy, chilli and oil in a blender and whizz until you get a smooth batter.
- Finely chop the spring onion and add to the batter.
- Add enough flour to get a thick but spreadable batter.
- Grease a frying pan or pancake pan and heat it over medium heat.
- Place dollops of the batter in the pan, then slightly flatten them, making circular shapes.
- Sprinkle them with sesame seeds, then flip them over, and cook for another minute or so.
- Transfer them to a plate and cook another batch.
- Serve them at room temperature with soy sauce, chilli sauce or toppings/dips of your choice.
