Smoked salmon, zucchini and feta salad

Background
This smoked salmon, zucchini and feta salad can be served as a starter at a dinner party, or as a light lunch or supper to celebrate special occasions. It's ready in just 15 minutes.
Ingredients
- 200g smoked salmon
- 1 large zucchini (courgette)
- 1Tbsp capers (in salt)
- Β½ Tbsp of grated lemon zest
- 1 Tbsp olive oil
- 1 Tbsp white wine vinegar
- 1-2 pinches of unrefined sugar
- 50g feta cheese
- 1 Tbsp chopped parsley
- 1 Tbsp dill
- Salt and pepper
Instructions
- Fry the capers in a little oil for 1 minute, drain on paper towel.
- Mix the olive oil, vinegar & sugar.
- Using a vegetable peeler, slice the zucchini into ribbons, then cut them into spaghetti-like strips.
- Put the courgette into a dish, add the dressing, capers, lemon zest and herbs. Season with salt and pepper, toss well and rest for 5 minutes.
- Tear the smoked salmon into 2-3 cm strips.
- Put a handful of zucchini onto a plate, add some salmon then crumble feta on top. Drizzle with some lemon juice and grind some pepper over it.
