Soy baked trout fillets

Background
Trout fillets have a very delicate flavour and so easy to cook! I decided to bake them in a Japanese-style sauce, which turned out to be fantastic. Serve these soy baked trout fillets with steamed vegetables and rice or udon noodles.
Ingredients
- 2 Trout fillets
- 1 Tbsp soy sauce
- 1 Tbsp mirin or rice wine
- Β½ tsp grated ginger
- 1 tsp sesame oil
- 2 spring onions
- 1 tsp sesame seeds
Instructions
- Set the oven to 190°C.
- Mix the soy, mirin, oil and ginger.
- Put the fish in a baking tray, skin-side down. Rub the fish with this mixture, pour over any leftover.
- Slice the spring onion and scatter around the fish. Cover the dish with a lid or foil.
- Bake for 10-25 minutes depending on the thickness of the fish.
- Take the lid/foil off, baste with the sauce and scatter the sesame seeds on top.
- Turn the oven setting to grill and cook for 5 more minutes until the top is golden.
- Serve immediately.
