Spaghetti with kale and pancetta

If you like pasta and need a no-fuss meal try this tasty yet easy recipe. Β This spaghetti with kale and pancetta is ready within 15 minutes. It's very filling and it's guaranteed to please the whole family! If you like your food spicy, do use the chilli - it adds another dimension to the flavours! You can use pre-packed & sliced curly kale if you like, and other types of pasta can be used too!
Ingredients
- 400g pasta
- 1 small onion
- 200g kale
- 300g pancetta
- 1 chilli (optional)
- 1 tin chopped tomatoes
- Grated Parmesan (optional)
Instructions
- Cook the pasta according to packaging instructions, then drain and cover to keep it warm.
- Meanwhile, chop the onion and chillies.
- In a saucepan, heat 1 Tbsp oil, add the onion, chilli and pancetta and cook until the bacon is crispy and the onion is soft. Add the tinned tomato and bring to the boil.
- Cut the kale into thin strips. Add these to the sauce, then put the lid on and simmer for 3-5 minutes. Taste and season with salt and pepper, if needed.
- Serve the pasta with the tomato & pancetta sauce on top. Sprinkle some grated cheese on top if you like.
