Spaghetti with sardines

Background
This is a wonderful, quick and easy dish that's perfect for lunch or midweek supper. It takes only 10 minutes to make! If you need to, you can use gluten-free spaghetti or other pasta. Serve it with green salad.
Ingredients
- 200g spaghetti
- 1 tin of sardines in oil
- 1 clove of garlic
- 2 Tbsp raisins
- 2 Tbsp pine nuts
- 2 Tbsp chopped chives
- 2 handful of rocket leaves
- Lemon (freshly squeezed)
Instructions
- Cook the pasta according to package instructions.
- Meanwhile finely chop the garlic and chives.
- Dry fry the pine nuts in a pan, set aside.
- Drain the sardines' oil into the pan then fry the garlic in it until soft. Add the fish slices, break them up with a wooden spoon.
- Drain the pasta, but keep some of the cooking water - about a small cupful. Add this to the sardines.
- Stir in the pine nuts and the raisins. Slide in the pasta, add lemon juice & season to taste. Toss well.
- Serve on two plates, add freshly ground pepper and sprinkle with chives .
