Spanish-style guinea fowl
Background
If you want to try guinea fowl, this recipe is the perfect introduction to it! This Spanish-style guinea fowl is very easy to make, incredibly delicious - and ideal for a family-meal or laid-back dinner with your friends. Serve it with a mash (or just bread) and a green salad.
Ingredients
- 1 Tbsp olive oil
- 150g cooking chorizo sausage
- 6 sage leaves
- 2 cloves garlic
- 1 medium onion
- 8 cherry tomatoes
- 1 tin of chickpeas, drained (400g)
- 1 tsp smoked paprika
- 300 ml chicken stock
- 100 ml Sherry
- 1 medium guinea fowl
- 2 Tbsp chopped parsley
Instructions
- Preheat the oven to 190°C.
- Skin then Slice the chorizo. Chop the onion and garlic.
- Cut the guinea fowl into 4 pieces. Season with salt & pepper.
- Heat the oil in a large casserole or ovenproof dish, add the onion, garlic, sage and chorizo. Gently cook until the onion is soft and the fat is released from the sausage.
- Add the drained chickpeas, the stock, sherry, paprika and tomatoes. Cook for a couple of minutes. Add the guinea fowl pieces.
- Bake in the oven for 30-40 minutes, turning the meat a couple of times.
- When the meat is golden and cooked through, the sauce has thickened, itβs ready to serve.
- Serve with ground pepper and chopped parsley scattered on top.
