Spiced broad beans
Background
If you like Middle-Eastern food you'll love this Lebanese dish. It is perfect in a meze or, if you mash it slightly with a fork, you can serve it as a dip with flatbread. You can give these spiced broad beans a kick by using chilli flakes or cayenne pepper instead of ground paprika. AnyΒ leftover is perfect for a picnic!
Ingredients
- 300g broad beans, podded
- 1 small onion
- 2 Tbsp olive oil
- 2 cloves of garlic, minced
- 1 handful of coriander (cilantro), chopped
- ½ tsp paprika
- 3 pinch ground allspice
- ¼ tsp salt
- Juice of half a lemon
Instructions
- Heat the oil in a large frying pan and fry the onion gently until soft.
- Add garlic and the chopped coriander, stir for 1 minute.
- Add the beans, spices, season with salt and pepper.
- Pour 1 cup of water over it and, under cover, simmer at low heat until tender (for about 15 minutes).
- When the water has almost completely evaporated, take off the lid, leave to cool.
- Add the lemon juice, sprinkle with paprika and coriander leaves.
- Serve it lukewarm or at room temperature.
