Spiced Chicken and pea stew

Background
This spiced Chicken and pea stew is Turkish dish which is very easy to make. You can add more chilli or serve it with chilli flakes if you’d like it to have a real kick. This gently spiced version can be served to kids too - either with rice or flat bread. It’s a perfect midweek family meal!
Ingredients
- 400g chicken thigh fillets
- 2 Tbsp olive oil
- 1 onion
- 1 red chilli
- 2 cloves of garlic
- 1 cinnamon stick
- 2 tsp ground coriander
- 1tsp ground cumin
- 200g garden peas, fresh or frozen
- ½ lemon, grated zest and juice
- salt and pepper
- 2 Tbsp chopped parsley
Instructions
- Cut the chicken into bite-size pieces.
- Finely chop the onion and garlic, then thinly slice the chilli.
- Heat the oil in a casserole dish and gently fry the onion for about 8-10 minutes, until soft.
- Add the chilli, garlic and spices, then stir- fry for another minute or so.
- Turn up the heat and add the chicken pieces. Stir-Fry until the chicken has changed colour.
- Add enough water to just cover the chicken. Bring to the boil, turn down the heat, cover, and simmer for 15 minutes.
- Add the peas and simmer for 3-4 minutes, until they are tender. Add lemon zest and juice. Season with salt and pepper and serve with the parsley scattered on top.
