Spiced chicken and sweet potato stew
Background
Chicken stew is a weekly meal in my household so I try to make it with different flavours. This week I created this spiced chicken and sweet potato stew, which is kind of a curry without the heat. Obviously, if youβd like it really spicy, add some chilli powder to the cooking or serve the stew with sliced fresh chilli (or dried flakes). Serve it with boiled rice or flat bread and a green salad.
Ingredients
- 8 pieces of drumsticks & thighs
- 2 Tbsp vegetable oil
- 1 red onion
- 1 clove of garlic
- Β½ red pepper
- 1 tsp ground cumin
- Β½ tsp ground turmeric
- Β½ tsp paprika
- 1 Tbsp tomato purée
- 1 small piece of cinnamon (optional)
- 1 large tomato
- 2 large sweet potatoes
- 100g baby spinach
Instructions
- Heat the oil in a large casserole dish and cook the chicken for 5-8 minutes. Meanwhile prepare the veggies: finely slice onion and garlic, chop the pepper and the tomato.
- When the chicken legs are light brown, remove them to a plate.
- Add the onion and garlic to the dish and gently fry until soft. Add the spices, stir for a minute, then add the tomato purée and the tomatoes. Cook for a couple of minutes, stirring.
- Put the chicken back, coat them well with the spiced paste. Pour over enough boiling water to cover the chicken completely. Season with salt and pepper. Bring to the boil, cover, then gently cook for 30 minutes over low heat.
- Dice the sweet potatoes and add to the stew. Cook for another 25-30 minutes until soft.
- By now you should have a thick sauce - if not, reduce it by turning up the heat and removing the lid. Cook for 5-10 minutes until you get a thick stew.
- Rinse the spinach then add it to the stew. Put the lid on and cook for 2 minutes. Let it rest for a couple of minutes, then serve.
