Spiced Fruit Loaf
Background
Our bread machine is regularly in use because my daughter is allergic to milk and so many shop bought breads seem to contain it. Also, of course, home made fresh bread is so much nicer! This Spiced Fruit Loaf is one I make from time to time for variety - it's really simple to make but the result is delicious! Perfect for afternoon tea, picnics and lunchboxes or as a gift for friends.
Ingredients
- 1 tsp Dried Yeast
- 400g Strong Wholemeal Flour
- 2 tsp Sugar
- 5 Tbsp Olive Oil
- 1 tsp Salt
- 2 tsp Cinnamon
- 1 tsp Mixed Spice
- 2 Free Range Eggs
- 220 mL Almond milk
- 150g Mixed Dried Fruit
Instructions
- Add the ingredients to the pan in the order above (or as per your bread machine manufacturer's instructions).
- Select a 5 hour, medium loaf size, whole wheat raisin setting (or equivalent for your machine).
- Choose the appropriate delay if you want it ready at breakfast time.
- When the programme completes, use oven gloves to remove the loaf and allow to cool before serving.
Tips
If dairy is not an issue, you can use 75g of butter instead of the olive oil and regular milk.Categories
