Spiced griddled squid

Background
Itβs useful to have a few, easy recipes for drink parties or starters. This spiced griddled squid is one such of my regular recipes as it takes only 5 minutes to prepare - which can be done well in advance as the marinated squid can be kept in the fridge for up to a day - then only takes 5 minutes to cook!Β You can serve the squid as a starter with a mixed salad or as tapas, perhaps with a glass of Cava or other fizzy? Enjoy!
Ingredients
- 250g squid (cleaned)
- 2 lemons
- 1 garlic clove
- 1 Tbsp olive oil
- Β½ tsp ground cumin
- ΒΌ tsp paprika (or chilli pepper)
- Salt & pepper
- 2 Tbsp chopped coriander
Instructions
- Make a cut down one side of the squid, opening it up. Lightly score the inside.
- Finely zest one lemon into a mixing bowl. Add the spices, oil and mince the garlic into it. Add the squid, including the tentacles. Season with pepper then add the juice of the zested lemon. Combine well and marinate until youβre ready to serve.
- Heat your griddle pan or grill plate until piping hot.
- Season the squid with salt then remove from the marinade and cook both sides for a couple minutes until lightly charred. Pour over the marinade and reduce the sauce for a minute or so while turning the squid over regularly.
- Transfer the squid to a serving plate, squeeze some lemon over it, then sprinkle some chopped coriander on top.
- Serve warm or at room temperature.
