Background
These spiced lamb koftas are very easy to make. Ideal for summer barbecues, parties or for a no-fuss midweek family meal. You can freshen it up by adding a couple of spoonfuls of chopped fresh herbs to it such as coriander, mint or parsley.
Ingredients
- 500g minced lamb (approx)
- 1 onion
- ½ tsp cayenne pepper
- 2 tsp ground cumin
- 2 tsp ground coriander
- salt pepper
- To serve: pita bread, salad
Instructions
- Pre-soak eight wooden sticks in warm water.
- Chop the onion very finely (or mince it). Mix the onion with the lamb and the spices. Season with salt and pepper.
- Divide the mixture into 8 balls. With damp hands press the balls around the skewers shaping them into roulades.
- Grill or barbecues the kebabs for 8-10 minutes until goldenand cooked through.
- Slip the meat off the skewers and serve wrapped in toasted (barbecued) flatbread, and condiments of your choice (such as yoghurt, salad, grilled veggies etc)
