Spiced onion and orange marmalade
Background
This spiced onion and orange marmalade is perfect for the Advent season as it smells and tastes just like Christmas! It's very easy to make and, in contrast to most chutneys, it can be used immediately. So it's ideal for making party nibbles and sandwich fillings - or serve it as condiment with cold meats and cheese. Also, this is a perfect recipe for last-minute Christmas gifts, if you want to give your friends or family something delicious and homemade.
Ingredients
- 6 medium red onions
- 3 Tbsp olive oil
- zest of 1 orange (1 Tbsp)
- 100 ml orange juice
- 100 ml red wine vinegar
- 50 ml balsamic vinegar
- 200g brown sugar
- 1 tsp dried chilli (optional)
- 1 tsp chopped rosemary leaves
Instructions
- Peel the onions, then slice them thinly.
- Heat the oil in a heavy-based pad and cook the onion on a low heat until soft, stirring gently (this will take about 15 minutes).
- Add the remaining ingredients, stir, bring to a simmer then cook gently, stirring occasionally, until you get a thick, sticky jam. This will take about 35 minutes.
- Let it cool for using immediately or spoon it hot into cold sterilized jars and seal for later.
