Spiced red cabbage with brandied cherries

Background
This braised spiced red cabbage with brandied cherries goes superbly with roast turkey, duck, goose or game. So itβs an ideal dish in a Christmas menu. You can make it days ahead -for a more intense flavour soak the cherries in the brandy overnight.
Ingredients
- 1 small red cabbage
- 1Β red onion
- Β½ tsp crushed cloves (about 4 cloves)
- 2Β Tbsp light muscovado sugar
- 1 cinnamon stick
- 1 star anise
- 1 bay leaf
- 1 pinch of salt
- Β½ cup red wine vinegar
- Β½ cup cherry juice
- 1 tin sherries in syrup
- 3 Tbsp cherry brandy
Instructions
- Thinly slice the onion and finely shred the cabbage. Drain the cherries into a bowl and add the brandy. Set aside to marinate.
- Put everything in a heavy-based pan, including the tinned cherries syrup, then bring to the boil.
- Cook for about 30 minutes over low heat, until the cabbage is tender, or longer for a softer texture. Add the brandied cherries and simmer for 10 more minutes.
- Serve warm.
