Spiced squash and apple soup with cider

Background
This easy-to-make spiced squash and apple soup with cider is perfect for the winter holiday season - particularly at Halloween, Bonfire night, Christmas & New Year's Eve parties. Serve it in a mug or small cups to warm up forΒ the party!
Ingredients
- 1 small onion, chopped
- 1 clove garlic, chopped
- ¼ tsp ground cloves
- ¼ tsp ground ginger
- ¼ tsp cayenne pepper
- 500g pumpkin or squash flesh
- 1 green apple
- 1 red apple
- 300 ml chicken stock
- 300 ml apple cider
Instructions
- Peel the pumpkin. Remove the seeds, cut the flesh into cubes, then measure out 500g.
- Peel & core the apples, then chop them up.
- Heat the oil in a pan and soften the onion in oil, add the garlic and stir for one minute. Add the squash, apple pieces and the spices then simmer, under cover at low temperature, for 10 minutes.
- Pour in the stock and the cider. Bring to the boil, then simmer for 20 minutes.
- When the squash is tender, blend the soup until creamy and silky.
- Season to taste and serve warm.
