Spicy Crayfish Spaghetti

Background
I love pre-cooked crayfish tails because they can be used for delicious and simple meals. And I love pasta dishes because they're also quick & easy to make, but are filling and can easily be made gluten-free. So I came up with this Spicy Crayfish Spaghetti dish using the ingredients I had in my kitchen. You can add other veggies to the pasta sauce if you like - bell pepper, mushrooms, green peas, broad beans &/or spinach would all work well. It takes less the 15 minutes to make this dish!
Ingredients
- 1 medium leek (or Β½ onion)
- 1 Tbsp olive oil
- 1 tsp capers
- 100g fresh cherry tomatoes, cut in half
- Β½ tsp chillii flakes
- 1 Tbsp sherry vinegar (or dry white wine)
- 1 pinch of sweet paprika
- I pack of cooked crayfish tails (approx 125g)
- 1 Tbsp chopped parsley
- 200g spaghetti
- To serve: Parmesan ( optional)
Instructions
- Cook the pasta according to the package instructions.
- Meanwhile, finely chop the leek. Heat the oil in a pan, and sautΓ© the leek. Add the capers, chilli and cherry tomatoes and cook for 5 minutes until the tomatoes are tender. Add the rice vinegar and let it bubble.
- Add the paprika, crayfish tails and parsley. Heat through, taste and season with salt and pepper.
- Drain the pasta and toss with the crayfish sauce.
- Serve with ground pepper and Parmesan cheese if you like.
