
Background
This spicy cucumber salad only takes 5 minutes to put together. It's perfect with barbecued fish or chicken, for parties or picnics. It keeps well for several days in the fridge.
Ingredients
- 1 cucumber
- 1 Tbsp white wine vinegar
- 25g granulated sugar (cane)
- 2 Tbsp chopped dill
- 1 red chilli
Instructions
- Cut the ends off the cucumber, then cut it in half lengthwise. Scrape the seeds out with a spoon & discard. Slice the cucumber thinly and put into a serving bowl.
- Deseed the chilli and remove the vein. Chop the flesh and scatter over the cucumber.
- Whisk the vinegar with the sugar until dissolved, then pour over the cucumber. Season to taste, sprinkle with the dill and toss well.
- Chill for 5-15 minutes before serving.
